Serrano-Orange Glazed Salmon

  • 1/2 cup orange marmalade
  • 1/3 cup Kraft Zesty Italian Dressing divided
  • 2 Serrano Chiles coarsely chopped
  • 8 Salmon Fillets 2lb.
  • 1 Red Pepper cut into thin strips
  • 4 slices Oscar Mayer Bacon chopped


  1. Mix Marmalade, 2 Tbsp. of the dressing and the chiles;
  2. Cover and set aside.
  3. Pour remaining dressing over fish in resealable plastic bag;
  4. Seal the bag and turn bag over several times to evenly coat fish with dressing.
  5. Refrigerate 20 minutes to marinate.
  6. Remove fish from marinade and discard bag.
  7. Place fish in medium skillet;
  8. Cook on medium heat for 5 minutes on each side or until fish flakes easily with fork, brushing occasionally with 2 tbsp. of the marmalade mixture.
  9. Transfer fish to serving plate and cover to keep warm.
  10. Add bacon to the same skillet and cook for 8 minutes or until crisp, stirring occasionally.
  11. Add peppers;
  12. Cook and stir for three minutes or until crisp-tender.
  13. Stir in remaining marmalade mixture.
  14. Spoon over fish.
